Roasted Vegetable Pasta

I saw a picture of a pasta the other day that inspired me to make this and I am so glad that I did! Roasted veggies, homemade Alfredo sauce and fresh grated parm.

Ingredients:

2 cups of brussel sprouts trimmed and cut in half or 1/4’s

1-2 cups broccoli florets

1-2 cups cauliflower florets

Drizzle of olive oil

Sea salt and pepper to taste

optional: 1 cup mushroom pieces

optional: 1-2 cups chopped cooked chicken breast

3 cups uncooked penne or cavatappi pasta


Alfredo Sauce:

1 tbsp olive oil

3 garlic cloves minced

2 cups Half & Half cream (I used lactose free, you could also use almond milk creamer or coconut cream)

1 tsp sea salt

1 tsp fresh grated black pepper

1 cup grated parmigiano reggiano (the good stuff)


Directions:

Heat oven to 375 degrees.

After rinsing and trimming the veg and chopping into bite sized pieces, spread them out on a big sheet pan covered in parchment paper. Drizzle with a bit of olive oil and sprinkle with sea salt and fresh ground pepper to taste. Roast until lightly browned. (I just roasted them until the sauce was done and that was about perfect timing - probably about 25-30 minutes). While the veggies are roasting cook the pasta according to package directions. (Tip: Salt helps to keep it from bubbling up and boiling over.) Before draining save about a half cup of the cooking water.

In a large pot with a heavy bottom, heat the olive oil over medium heat. Add the garlic and cook until fragrant. (This only takes a minute or so - don’t burn it). Add the cream and bring to a low boil, stirring regularly. Add the Parmesan and the salt and pepper and a bit of the pasta water. Stir until the cheese is melted and the sauce is slightly thicker. (This will be much thinner than store bought Alfredo). Stir in the pasta and the veggies and serve with a bit of extra parm and fresh grated black pepper. If it seems too dry, add in a bit more of the pasta water.

I put some italian sausages in the oven with the veggies to serve alongside the pasta for a quick, easy meal. You could add cut up sausage pieces to the pasta or add in the optional cooked chicken pieces for a one pot dish.
